The soccer ball will always move faster than the players. If a player takes too many touches on the ball then it gives the defense time to get numbers behind the ball and slows the offense.
A good metric to use is simply determining the number of touches that players take in a game. Often midfielders will have the most touches, but it will depend on the players and the team.
This is not to say that players should not take more touches in certain situations. There will always be situations where a player needs to take on a defender and sometimes two, which will require more touches.
